Does your significant other relentlessly send you recipes via social media messenger in hopes that you will eventually try one of them? Out of the dozens of unread messages, I have no idea why I actually opened and decided to try this one. I honestly thought the cookies were going to be terrible and didn’t even use all of the sweet potatoes I had on hand in attempts to waste as little food as possible when the recipe inevitably failed. I think I was working through a bit of a post traumatic response from the two times I got drawn in and bamboozled by my Facebook feed into making Greek yogurt dessert. All of that expensive organic Greek yogurt and expensive organic cocoa powder tragically tossed in the trash. I should’ve known better, Greek yogurt is a star on its own. I will not get fulled a third time. The only accompaniment to my Greek yogurt from now on will be honey or cucumber, but I digress.
These sweet potato cookies were an absolute hit! They’re quick and easy and after some quick prep and cook time, you're left with a soft, fudgy, gooey and guilt-free treat. They were a yummy side to my morning protein shake….and treat after dinner…. and somehow I had enough self-control to avoid a between meal snack .
